How to make our café's signature açaí bowls at home
Make our Sydney café's eight signature açaí bowls at home, with the same açaí as our Original Sensation pint. No blender: scoop, add the toppings, serve.

Our café in Chatswood, Sydney, has eight signature açaí bowls on its menu. Each one starts with our house açaí, which is the same as our Organic Açaí Original Sensation pint; Açaí Zero Sugar (Not a low calorie food.) is the other base on the menu. Because the base is the same, you can make every one of these bowls at home with a pint and a scoop. Here they are in menu order, with the ingredients exactly as the menu prints them.
Do you need a blender for these bowls?
No. The base is açaí sorbet, churned and frozen at the factory. The only tool you need is a scoop.
What do you need?
- A pint of Organic Açaí Original Sensation, or Açaí Zero Sugar (Not a low calorie food.).
- A bowl, or a clear glass if you want the café's layers.
- An ice-cream scoop or a measuring cup, so each bowl comes out the same size.
- The toppings for the bowl you are making. Fresh fruit is easy. For the sauces and crumbs, a store-bought spread or cookie does the job at home.

How do you make them?
The same three steps for all eight: scoop, top, serve.
- Scoop. Take the pint from the freezer and scoop the açaí into the bowl. The Original Sensation pint's nutrition panel gives one serving as 2/3 cup; the café doesn't publish its bowl portions, so make yours the size you like. A scoop dipped in warm water goes through firm sorbet more easily. Put the pint straight back in the freezer.
- Top. Add the toppings for your bowl; don't stir them in. Sauces and spreads drizzle more easily if you warm them a little first.
- Serve. Eat it right away. Sorbet softens quickly at room temperature.
How do you get the café look?
At the café, the açaí goes into a clear cup in a tall swirl, with sauce, fruit and granola layered around it. Scooped from a pint, your bowl will be rounder and lower, and that is fine. For the layers, build in a clear glass: a spoon of granola, a scoop of açaí, a drizzle of sauce, then repeat, and finish with fruit on top.
The eight signature bowls
In menu order. Each "On the café menu" line is printed exactly as the menu lists it. The photos are the café's own, and some differ from the printed list.
1. The Original

At home: Fan banana coins and halved strawberries around one side, pile granola in the middle, and finish with a thin drizzle of honey.
Allergy note: Granola can contain gluten and nuts. Honey is not vegan.
2. Pistachio Royale

At home: Warm a spoon of pistachio cream so it pours, drizzle it over the fruit, and scatter chopped pistachios on last so they stay crisp.
Allergy note: Pistachios are tree nuts, and pistachio creams often contain milk. Granola can contain gluten and nuts.
3. Bueno Bliss

At home: A warmed hazelnut spread stands in for the sauce, and a few chocolate sandwich cookies, crushed in a bag, make the crumbs.
Allergy note: Hazelnut spreads usually contain tree nuts and milk, and sandwich cookies usually contain wheat. Granola can contain gluten and nuts.
4. Tropical Escape

At home: Dice the mango and kiwi, spoon passionfruit pulp over the top, seeds and all, and finish with coconut flakes and granola. The fruit goes on top; the base is still açaí.
Allergy note: Granola can contain gluten and nuts.
5. Biscoff Indulgence

At home: Warm a spoon of cookie butter until it drizzles, then crush a couple of speculoos cookies over the top.
Allergy note: Cookie butter and speculoos cookies usually contain wheat. Granola can contain gluten and nuts.
6. Peanut Power

At home: Loosen a spoon of peanut butter with a few drops of warm water so it drizzles, then add banana, granola and coconut flakes.
Allergy note: Contains peanuts. Granola can contain gluten and nuts.
7. Snow White

At home: Drizzle sweetened condensed milk over the fruit, dust milk powder through a small sieve for the snowy finish, then add coconut flakes and granola.
Allergy note: Condensed milk and milk powder are milk, so this bowl is not dairy-free or vegan. Granola can contain gluten and nuts.
8. Vitality Bowl

At home: Add the fruit, a spoon of peanut butter and a drizzle of honey, then scatter rolled oats and a pinch of chia seeds over the top.
Allergy note: Contains peanuts. Oats can contain gluten unless the pack says gluten-free. Honey is not vegan.
A note on allergens
The notes above flag what the printed ingredients make obvious. They are not a full allergen list, and your toppings will not be the café's. Read the label on everything you use, including the pint. The certifications on our pint and cup cover the sorbet, not the bowl you build on it: Snow White, for one, has condensed milk and milk powder.
At the café, tell the team about any allergies before you order. The menu's notice, as printed:
Please advise our team of any allergies before ordering. Some items may contain or come into contact with common allergens. Gluten-free ingredients may be prepared in a shared environment and cross-contamination may occur. We cannot guarantee any item is completely allergen-free.
