Pink guava and acerola: two Brazilian fruits in one sorbet

Pink guava and acerola are two Brazilian fruits. What they are, and what goes into our rosy Pink Guava & Acerola sorbet.

Two fruits, one rosy sorbet. Pink guava and acerola are both grown in Brazil, and both are common there in juices and desserts. In the US they are less familiar, so here is what they are, and what goes into our Pink Guava & Acerola sorbet.

What is pink guava?

Guava is a tropical fruit that grows on a small tree. It is grown across the tropics, and Brazil is one of the countries where it is grown widely. The fruit is round or pear-shaped, with a skin that turns from green to yellow as it ripens. Cut one open and the flesh is white or pink, depending on the variety. Pink guava is the pink-fleshed kind, and it is the guava behind the pink juices and pastes that are common in Brazil.

What is acerola?

Acerola is a small, bright red fruit that grows on a shrub. It is native to the tropical Americas and is grown widely in Brazil. It is often called acerola cherry, or Barbados cherry, because of its size and color, but it is not related to the cherries sold in US stores. The fruit is soft and thin-skinned, so in Brazil it is usually sold as juice or frozen pulp rather than as fresh fruit.

What is in Pink Guava & Acerola sorbet?

The ingredient list: Organic Pink Guava (29%), Organic Acerola (28%), Filtered Water, Cane Sugar, Natural Colors (Carrot, Beetroot Extract), Stabilizers (Pectin, Locust Bean Gum).

The two fruits come first, and together they are most of what is in the tub. Cane sugar is the sweetener. Pectin and locust bean gum hold the texture.

Which Austropical flavors are certified organic?

Three: Organic Açaí Original Sensation, Organic Mango and Organic Coconut (USDA Organic, NOP ID 3950001101). Pink Guava & Acerola is not certified organic.

Where does the pink color come from?

From the fruit, and from carrot and beetroot extract, added for color. Both are in the ingredient list above. The result is a rosy pink sorbet, and rosy is the word we use for it.

What does pink guava and acerola sorbet taste like?

Tropical, with two fruits sharing the tub. We keep taste notes short on purpose. A fruit you have not tried is hard to describe, and the sorbet describes itself better than we can.

How is it served?

The same way as the rest of the range: ready to eat, no preparation, served frozen. Scoop, top, serve. On its own, beside a scoop of açaí, or in smoothies, shakes and dessert recipes. In our foodservice program it is one of the four bowls on the menu.

Pink Guava & Acerola is certified vegan (Vegan Australia) in pints, Grab'n Go cups and buckets, and kosher (Kosher Australia). It comes in a 16.9 fl oz (500 mL) pint, an 8.5 fl oz (250 mL) Grab'n Go cup with a spoon, and a 22.49 lb (10.2 kg) foodservice bucket. Keep it frozen at 0 °F (−18 °C) or below.

When can you buy pink guava sorbet in the US?

Organic Açaí Original Sensation and Organic Mango are planned first for US retail, in pints and Grab'n Go cups from March 2027. Pink Guava & Acerola follows with the other flavors, and we will say when. If you want it on a campus or café menu, the 22.49 lb (10.2 kg) bucket is set up as an item at Vistar. Setup is not stock, and which bucket flavors come on the first container is still being confirmed. Ask us for the spec sheet.
