What is açaí sorbet, and how is it different from an açaí bowl base?
Açaí sorbet is a ready-to-scoop frozen dessert made from açaí, water and sugar. How it differs from a blended açaí bowl base, and exactly what goes into ours.

Açaí bowls are everywhere. Açaí sorbet is less common, and the two are often confused. They are close, but they are not the same thing. This post explains what sorbet is, what a bowl base usually is, and why a ready-to-scoop sorbet needs no blender.
What is sorbet?
Sorbet is a frozen dessert made from fruit, water and sugar. It is churned as it freezes, which is what makes it smooth enough to scoop. Ice cream starts with cream or milk. Sorbet starts with fruit. That is the difference in one sentence.
Our açaí sorbet follows that definition. Organic Açaí Original Sensation is made from organic açaí, filtered water, organic cane sugar, organic agave syrup, a stabilizer (sodium alginate), natural flavor and an acidity regulator (citric acid). Fruit comes first on the label. All ten of our flavors are certified vegan (Vegan Australia) in pints, Grab'n Go cups and buckets.
What is açaí?
Açaí is the fruit of a palm that grows in the Amazon. The berries are small and dark purple, and they grow in clusters near the top of the palm. In northern Brazil, açaí is an everyday food, usually eaten as a thick purée. Our sorbet is made in the Brazilian Amazon, where açaí grows.
The color is the fruit's. Açaí sorbet is a deep purple, close to black in the tub.
Where does açaí come from?
Açaí grows on tall, slender palms in the floodplain forests of the Brazilian Amazon. Each small, dark berry is mostly seed. The part we eat is the thin layer of skin and pulp around that seed. In Pará, the state that grows most of Brazil's açaí, and in neighboring Amapá, many of the leftover seeds are burned as fuel in ceramic kilns and in industrial boilers.

This is açaí. [A small, dark berry is held up on a fingertip.] And here's the açaí we eat. It comes from this thin outer layer. [Fingers rub the berry, and the dark skin and pulp come away.] All those tons of açaí exported all over the world are made from this thin layer. [A hard, pale seed is left in the palm, beside the dark bits of skin.] This is a valuable layer. But the açaí fruit isn't only good for its edible layer. [The seed is held up between two fingers.] This seed is in high demand as biomass for heating and for firing up industrial boilers, and so on. What an important little fruit for Brazil's economy!

Esse é o açaí. E aqui é o açaí que a gente consome. É tirado dessa casquinha aqui. Todas aquelas toneladas de açaí que são exportadas para o mundo inteiro são feitas a partir dessa casquinha. Isso aqui é uma casca valiosa. Mas a fruta, o fruto do açaí, não é bom só pela casquinha comestível, não. Essa semente, ela é uma biomassa muito disputada para aquecer e fazer inicialização em caldeiras industriais, etc. Pense numa frutinha importante para a economia brasileira!
What is an açaí bowl base?
An açaí bowl base is a blended, frozen açaí purée served in a bowl. In a café it is usually made to order. Frozen açaí purée goes into a blender with a little liquid, and often a banana or other fruit. The blender runs until the mix is thick. The base is poured into a bowl, and the toppings go on.
That method works, but it has moving parts. It needs a blender, a recipe for the mix, and a person to run it for every bowl. The texture depends on how much liquid goes in and how long the blender runs. Two bowls from the same counter can turn out differently.
How is açaí sorbet different from an açaí bowl base?
The difference is when the work happens. A bowl base is blended at the moment you order it. A sorbet is churned and frozen at the factory. By the time it reaches you, the work is done.
Three things follow from that.
- No blender. Açaí sorbet is scooped straight from the pint, the cup or the bucket.
- The same texture every time. The sorbet is made in one place, to one recipe, and pasteurized before it is frozen.
- Ready to eat. No preparation: serve it frozen.
Sweetness is also fixed. Many bowl bases are sweetened at the blender with juice, banana or syrup, and the amount changes from bowl to bowl. In a sorbet the sugar is part of the recipe and is printed on the label.
Does sorbet still make an açaí bowl? Yes. Scoop it into a bowl and add toppings. We call it the açaí bowl, ready to scoop.
How much açaí is in açaí sorbet?
That depends on who makes it, so read the ingredient list: the first ingredient is the one there is most of. In every Austropical açaí sorbet, açaí comes first. Organic Açaí Original Sensation and Açaí Zero Sugar (Not a low calorie food.) are mostly açaí; Açaí Banana Sunrise and Açaí Strawberry Crush add banana or strawberry.
Original Sensation is USDA certified organic. So are two of our fruit sorbets, Organic Mango and Organic Coconut. The other seven flavors in the range are not certified organic.
What formats does açaí sorbet come in?
Ours comes in three.
- A pint, 16.9 fl oz (500 mL), in a paper tub with a foil seal and a paper lid. A pint holds about three 2/3-cup servings.
- A Grab'n Go cup, 8.5 fl oz (250 mL), with a spoon included. One cup is one serving.
- A 22.49 lb (10.2 kg) foodservice bucket, a white square pail with a snap lid, for cafés, campus dining and grab-and-go counters. One bucket holds about 69 servings of 2/3 cup (147 g).
All three carry the same recipe. Keep them frozen at 0 °F (−18 °C) or below.
Is açaí sorbet the same as frozen açaí packs?
No. Frozen açaí packs are purée sold in flat pouches for blending. They are an ingredient. Sorbet is a finished dessert: churned, sweetened, frozen and ready for a spoon. If you want to blend, the packs are made for that. If you want to scoop, sorbet is the shorter route.
