How to store sorbet so it stays smooth
Keep it at 0 °F (−18 °C) or colder, keep air off the surface, and never let it thaw and refreeze. How long it keeps, and what freezer burn really means.
A pint of sorbet is easy to keep at its best. Three habits do almost all the work: a cold freezer, a sealed surface, and no thawing.
What temperature should sorbet be stored at?
Keep it at 0 °F (−18 °C) or below. That is the storage line on every one of our packs. The USDA also uses 0 °F as its benchmark: food held constantly at that temperature stays safe, and only its quality changes over a long time.
How long does sorbet last?
Our sorbets have a shelf life of 24 months from manufacture, sealed and stored frozen. Check the date on the pack.
How do you stop freezer burn?
Freezer burn is the dry, icy patch that forms where air touches frozen food. Once a pint is open, keep air off the surface: press a piece of parchment or plastic wrap onto the sorbet before you put the lid back, then close the lid firmly.
Is freezer-burned sorbet safe to eat?
According to the USDA, freezer burn is a quality problem, not a safety one: it dries out the surface and changes the texture. Scrape off the icy layer and enjoy the rest.
Can you refreeze sorbet?
Do not let it thaw and refreeze. Temperature changes affect the texture, and a sorbet that melts and freezes again turns icy. Put the pint back in the freezer as soon as you have scooped.
How do you serve it?
